Saxenburg Wine Estate

Officially proclaimed in 1693, Saxenburg is one of the oldest farms in South Africa.
Thanks to the combination of the perfect natural conditions and a highly skilled and driven team, Saxenburg wines have won the highest praise, not only in South Africa, but around the rest of the world.
The terroir at Saxenburg is perfectly suited to Shiraz and it is thanks to this varietal that Saxenburg has become a prominent South African export. Thanks to the wine maker’s belief that exceptional wines are made on the vine, we practise a well-managed system of summer pruning to keep yields low. With fewer bunches left, grapes mature into a finer quality and less craft is required in the cellar.
Although famous for Shiraz, many Saxenburg wines - reds and whites - are enjoyed around the globe.

Winemaker's Comments
A complex, medium bodied wine, with warm spicy black fruit richness. Wonderfully approachable at the moment. Ideal with lamb or red meat dishes, and pasta or as a casual wine.

Vinification Details
The cultivars fermented separately in the traditional Saxenburg way and blended together after wood maturation.

Winemaker's Comments
A friendly fruity wine with tropical flavours and a elegant long finish. An all occasion wine or with light dishes.

Vinification Details
All cultivars fermented cold separately and blended together before bottling. No wood maturation.

Winemaker's Comments
This classic blend with a good colour shows a nice combination of dark and red fruit with dark cherry and plum more prominent. Medium bodied with good subtle oak to complement the wine. It has a good mid palate with creamy tannins ending with a fresh acidity. It is ready to enjoy now but will mature into a more complex wine. The natural balance of it will compliment game, red meat or full flavoured meat dishes as well as pasta and pizza.

Vinification Details
Selected full ripe grapes fermented with yeast and no sulphur, in open tanks at 28°C. Punching down and pumping over four times daily and some skin contact after fermentation was allowed. Malolactic fermentation finished naturally in tank.

Winemaker's Comments
This 100% Chenin Blanc has a beautiful green tint in colour and shows very typical stone fruit aromas with hints of pear, passion fruit and Minneola flavours. The palate has nice vibrant fruit layers, a good balance and leaves a lingering fresh finish. A well balanced wine that will complement spicy seafood, sushi, fish dishes and most pasta dishes or to enjoy on its own.

Vinification Details
Healthy grapes were harvested in the early mornings, on specifically identified cool mornings. Short skin contact, and pressed whilst still cool. The juice settled for one day, and the clear juice was fermented cold with 2 different yeast strains to enhance optimal flavour. It had long lees contact for complexity and did not go through Malolactic fermentation.

Winemaker's Comments
This Shiraz is deep dark purple in colour and full bodied. It has a nice balance between fruit and spicy/peppery falvours. Well integrated oak flavours. It has a fine/soft tannin structure with a smooth fruity finish. This wine will go well with red meat dishes, game and cheese, or as a nice casual drink.

Vinification Details
Open tank fermentation at 28°C, with punching down and pumping over, four times daily. Short extended skin contact. Malolactic fermentation in tanks, no fining or filtration before barrel maturation.

Winemaker's Comments
This Cabernet Sauvignon has typical mulberry, cassis and blackberry aromas, with hints of cigar box. The wine is well balanced with layers of red fruit present, and has a nice fresh and creamy finish to it. It has a good structure mid palate with notes of mocha present on the aftertaste. It will complement most red meat dishes, venison or creamy beef stroganoff.

Vinification Details
The selected areas of the best blocks were harvested at optimum ripeness and yeast fermented in open tanks at 28°C. Regular punching down and pumping-over was practiced, with 2 -3 weeks of skin contact after fermentation.

Winemaker's Comments
A refined and elegantly structured Merlot with layers of rich, supple berry fruit flavours hints of mocha chocolate complemented by fine tannins. The wine is an ideal accompaniment to rich, full flavoured meat dishes.

Vinification Details
Selected from best part of the vineyard, fermented with yeast in open tanks at 29°C plus 2 weeks of skin contact after the fermentation.

Winemaker's Comments
Notable red fruit on the nose, with cherries, crème de cassis and plum in abundance, with some earthy notes and hints of almond also present. The subtle use of oak contributes to a fresh style. Layers of fruit on the palate, with creamy tannins and a fresh finish. Enjoyed with game meat, curry dishes, or with a creamy wild mushroom risotto.

Vinification Details
Harvesting at optimum ripeness, and then the fermentation is in open-top fermentation tanks. Fermented with a selected yeast culture at 28°C. Punching down and pump over three times daily. Pressed early with little skin contact after fermentation.

Winemaker's Comments
This 100% Shiraz with its warm sweet spicy flavours and dark fruit notes shows a fine balance between fruit and tannin. This Shiraz is very well balanced and ends with a rich, full mouthfeel and creamy aftertate. The wood is well integrated and the fresh acidity compliments this wine. This elegant wine is best complimented by game or full-flavoured meat dishes.

Vinification Details
Only selected vineyards or part of vineyards. Open tank fermentation at 28°C, with punching down and pumping over, four times daily. Three further weeks of skin contact after fermentation with malolactic fermentation in tanks, no fining or filtration before barrel maturation.

Winemaker's Comments
The aroma shows nice mineral flavours with good citrus, red apples and nutty tones prominent. Good body and length on the palate with lime and citrus flavours in abundance. Ending with a lingering aftertaste, with a fresh approach on the acidity. Will pair well with Cape Snoek, creamy seafood and pasta dishes, or lighter meat dishes.

Vinification Details
This Saxenburg Chardonnay PC was fermented and matured 100% in French oak, with selective toasting.

Winemaker's Comments
This Saxenburg Sauvignon Blanc PC shows lovely flavours like granadilla, grapefruit, pears, with hints of capsicum and mineral flavours. Well-structured on the palate, with all the flavours prominent. The acidity is supporting the mouthfeel, with a long lingering aftertaste. It goes well with salads, lighter summer dishes and seafood, or enjoy on its own on a nice summer day.

Vinification Details
Only healthy grapes in cool conditions are harvested, skin contact for up to 24 hours, pressed, juice settled, clear juice fermented, with six different yeasts and long lees contact for complexity. There was no malolactic fermentation.

Winemaker's Comments
A MCC with very young colour, fine mousse and a prominent yeasty flavour already. The taste is crispy, fruity and well balanced. It finishes refreshing. The grape flavours stays prominent. This wine will be more complex after some time in your cellar and will compliment all fine dishes and special occasions.

Vinification Details
Light pressed, cold fermented and bottled for the 2nd fermentation.

Winemaker's Comments
Selected from the best of Saxenburg, this wine is very complex and well balanced, spicy and a long finish with very fine tannins.

Vinification Details
Hand picked grapes from 2 vineyards fermented with Shiraz-friendly yeast to express maximum cultivar and vintage character. 30 Days skin contact was allowed and malolactic fermentation with bâtonnage in new French and American oak barrels where it remained for 3 months without SO2. Thereafter SO2 added and matured a further 21 months in the same barrels without racking.
